His experience includes managing restaurants, banquet operations, and room service at five-diamond and worldwide hotels & restaurants.

Recently accomplished two certifications with HarvardX of Harvard University: Science & Cooking: From Haute Cuisine to Soft Matter Science (physics) and FERM: Food Fermentation: The Science of Cooking with Microbes.

Currently, Mr Calderon is a freelance Chef consulting for several restaurants. His background experience includes several Hotels and Resorts, such as El Conquistador Resort (Puerto Rico), The Standard Hotel (NYC), Chicago Hilton & Towers, and Grand Fiesta Americana Coral Beach Cancun (AAA 5 Diamond Property).
